The Ultimate Survivor Bar

My favorite: The Ultimate Survivor Bar

Inspired by My Favorite Coffee Shop: Mod Coffee & Tea House on Post Office Street in Galveston, TX. They are Famous for their "Survivor Bar".  The survivor bar is kind like a "Kind Bar" but with a lot more goodness!! This is my version of it since I do not have an actual recipe. My only problem is with their bar the chips are barely melted.

In the mix::

1 cup raw almonds - coarsely chopped
1/2 cup raw walnuts - coarsely chopped
1/2 cup raw cashews - coarsely chopped
1/2 cup dried apricots
1/2 cup raisins
1/2 cup dried cranberries
1/4 cup semi-sweet chocolate chips
1/4 cup butterscotch chips
2 tablespoons chia seeds
1 tablespoon flax seeds
1/4 cup pure syrup
1/4 cup raw honey*
3 tablespoons ground flax
1/2 teaspoon vanilla
1/4 teaspoon cinnamon
3/4 teaspoon salt

Preheat oven to 350*

In a bowl, combine syrup, honey, ground flax, vanilla, cinnamon, and salt. Set aside.

In a large bowl, combine almonds, walnuts, cashews, all dried fruit, chia seeds, flax seeds and both chips.( save a few of each chips for the finished project.)

Stir in syrup + honey mixture into nut/fruit mixture until combined.

Press into an 8x8 pan lined with foil

Bake at 350* for 20 minutes, until edges are beginning to brown.

Immediately grab foil from both sides and remove foil from pan.

While it's still warm sprinkle the remaining chips on top.

Allow to cool completely before cutting into 16 bars. Bars will release from foil when completely set up.

*you can replace honey with another 1/4 of syrup.
